Ever felt the late morning or afternoon slump? It may be due to the food that you have in the mornings. Eating a healthy breakfast will help to ensure your blood sugar levels are stable enough to keep you alert and attentive as you get on with your day. 

These easy breakfast recipes are designed to improve your mood, energy levels and daily performance. They are also a great way to improve your mental performance, as studies have shown that food directly impacts mental health. You don’t need many ingredients and best of all, each recipe can be made in 30 minutes or less. You can also prepare or make each recipe overnight to be ready the next morning when you wake up.

 

Sweet Potato Breakfast Hash

“Ready in just 20 minutes, this recipe is packed full of complex carbohydrates, proteins and fats that provide your brain with the ultimate boost it needs throughout the day. Full of flavour, using natural ingredients and seasonings, this breakfast is a sure winner”!

Serves 2 (or 1 hungry person)


Ingredients:

2-3 medium sized sweet potatoes, diced
1 apple, diced
1 spring onion, chopped
3 slices of bacon, chopped
100g spinach leaves
2 eggs
½ avocado (optional)
2 tbsp coconut oil to fry

Method:

  1. In a large frying pan, add your oil on a medium heat.

  2. Add in your sweet potatoes. Let this cook for 5 minutes, stirring frequently.

  3. After 5 minutes, reduce to a low-medium heat.

  4. Next, move your sweet potatoes to one side and add your spring onions. Cook for 1 minute and stir into the sweet potatoes to incorporate.

  5. Turn the heat back up to a medium heat.

  6. Again, moving the sweet potatoes and spring onions to one side in the pan, add in your bacon and let cook for 4 minutes.

  7. Stir the bacon through the mixture.

  8. Now, add in your apple, stirring through. Cook for 2 minutes.

  9. Next, add your spinach leaves. Cook for 1-2 minutes before stirring through.

  10. Once spinach leaves are wilted, make two holes in between the mixture.

  11. Crack your eggs and add each one in both holes.

  12. Reduce the heat to a low-medium level. Let the egg cook for 4-5 minutes till the whites of the eggs are firm.

  13. Once done, serve and enjoy!

Almond Butter Banana Pancakes

“This delicious pancake recipe is completely gluten free and uses only 3 main ingredients! - This is one of my favourite treats for breakfast”.

Ingredients:

2 bananas
2 eggs
1/2 cup of almond butter
Some coconut oil or grass-fed butter of your choice for frying

Method:

  1. In a mixing bowl, mash your bananas.

  2. Next, whisk in your eggs until fully incorporated.

  3. Add your almond butter and stir through the mixture. Mix well.

  4. In a pan on low-medium heat, adding 1 tbsp oil per pancake, pour 2-3 tbsps of your pancake mix into the pan.

  5. After 3 minutes, flip using a spatula and cook for another 2 minutes.

  6. Once all pancakes are done, serve with a topping of your choice and enjoy!

Key tip: these pancakes don't bubble like normal so keep an eye on them to ensure they don't burn.

 

Vegan Orange Maca Smoothie Bowl

“A smoothie bowl is a delicious way to get in the right kind of nutrients in the morning, keeping you full and energised. The addition of maca powder is beneficial, as it is known to boost energy and improve mood, giving you the right kind of boost for your day.”

This smoothie is full of healthy fats and gives you the right amount of sweetness for a breakfast treat! Don't forget to segment your grapefruit as this will remove the bitter flavour grapefruits usually carry!

(Serves 1)


Ingredients:

1 pink grapefruit, peeled and segmented
1 orange, peeled
½ cup of coconut milk
1-2 tsps raw maca powder (optional)

Method:

  1. Process all your ingredients in a high powered blender.

  2. Place in your favourite breakfast bowl, add some toppings and enjoy!

Serving suggestion: top your smoothie bowl with some healthy nuts, coconut flakes, granola - the list is endless and completely left for you to customise!
