Superfood Salmon Salad
& Green Smoothie

Falling short on ideas for making the most out of your kitchen cupboard? Nutritionist Talibah Simone, has chosen the superfood salmon salad and green smoothie to save the day. “The superfood salmon salad couldn’t be any richer in nutrients, from the salmon packed with omega 3 to the antioxidants in the blueberries combined with the magnesium packed spinach. The textures of the soft avocado and the crunch of the red cabbage with the sweet dressing makes such an enjoyable meal”.

What you’ll need

1 salmon fillet

Rocket

Spinach

Red cabbage

½ Avocado

Handful of pomegranates

Handful of blueberries

Seasoning for the salmon:

½ tsp dried parsley

½ tsp paprika

½ tsp black pepper

Honey mustard dressing:

1tbs dijon mustard

½ tbs honey

½ tbs white wine vinegar

½ tbs olive oil

½ tbs sea salt

1 tbsp parsley


How to prepare:

  1. Preheat the oven to 200 C or 180 if you have a fan oven. Season the succulent salmon, place onto a non-stick or oiled tray and cook for up to 20 minutes.

  2. Wash all the greens and lightly pat dry with a kitchen towel. Slice the red cabbage in half, then half again. Wash the blueberries and then slice the avocado.

  3. For the dressing, combine all ingredients together and mix.

  4. Place every ingredient into the bowl and drizzle over the honey mustard dressing.

  5. Enjoy!

 

 

The Green Smoothie

Protein, fibre & nutrient packed! The sweetness of the banana and mango are the perfect fruits to accompany the superfood spirulina. Spirulina is the protein and mineral packed superfood. “It is my go-to when I need an immune boost. If I feel a cold coming along, I literally drink this with 1 litre of water throughout the day – it makes a big difference”. 


 

What you’ll need

250 ml almond milk (or any milk of your choice)

2 handfuls of kale or spinach

1 banana

Half a mango/ handful of mango chunks

1 tbsp of spirulina 

Optional: ½ tsp honey

How to prepare:

Mix the ingredients in a blender until it’s smooth. Add more milk if you prefer your smoothies thinner. Pour into a glass and digest!
