Quarantine On A Budget: Paprika Cod

COVID-19 has caused quite an uproar in the supermarkets with arguments over toilet roll and pasta you don’t really need and 2-hour long queues to buy items you already have at home. So, with everyone panic buying, what’s left on the shelf?
On Instagram, health enthusiast and meal service provider, Talibah Simone was asked 'What meal can I make for £5 during quarantine?'. Immediately she accepted the challenge! Although the supermarkets are fairly low on stock at present, if you have the fundamentals, you'll easily be able to whip up a great meal. Firstly, think of what kind of meat or pulses you would like to have. At the moment, the frozen fish aisle in large supermarkets are fairly stocked - keep your budget at a maximum of £3. The price range for rice should be between 50p - £1. Luckily fresh vegetables in most supermarkets are really cheap and you are able to buy them from as little as 32p! For £5.00, I made one of my favourite fish recipes. Paprika Cod! It feeds 2 people, with 2 portions of cod each. At home, I already had onions, garlic and seasonings. If you do not have those, prioritise another £5 to stock up on seasoning.

Frozen cod - £3.30
Broccoli - 34p

Rice - 70p
Method:
Firstly, mix all seasonings with butter into a bowl and spread evenly over the cod.
Preheat the oven for 190 degrees.
Place the fish in the oven for 20 minutes in either a Pyrex dish uncovered or an oven tray with foil. Add a tablespoon of coconut or rapeseed oil to reduce the skin sticking to the bottom. Cod releases a bit of water so don't be alarmed if the dish seems quite wet.
Whilst the fish is cooking, measure the rice into a cup and level the top.
Rinse the rice thoroughly in cold water until the water is completely clear.
Pour the rice into a pan ensuring to use a low heat. Add double the amount of water.
Bring the rice to a boiling point and place a lid on the top of the pan, still on a low heat.
Cook the rice for 10 minutes.
Once the fish is cooked, sprinkle mixed herbs and add some sliced red peppers (if you have any).
Fluff the rice with a fork and serve alongside your paprika cod.
